There are many reasons why you would want a portable kitchen island . One of the biggest is that that cooking outdoors is fun. The ideal location for many people is right outside of the indoor kitchen. In order for your portable  kitchen island to function, you need to hookup all the necessary utilities. You will need to have a gas line for your grill and your stove. You will also need to setup appropriate plumbing for drainage from the sink. Electricity will be needed for a few outlets for electrical appliances. The third most important thing you will need to do is to install proper cabinets. These cabinets need to be the right size and shape. These cabinets can act as storage for other items during the year. There also needs to be enough of them to hold all of your outdoor cooking utensils. You can purchase readymade cabinets and install them yourself or you can get cabinets custom made. The latter option can cost you more money. You will also need to ensure that your outdoor kitchen is safe by allowing proper ventilation that allows smoke to be vented out and away from the house. You should also have a fire extinguisher ready for times when things get out of hand in the outdoor cooking area.

I had a built in island in one house we had. It was ok but it didn't have any plug ins and it didn't have a sink. It was also hard to clean. I rather have something I can move.
